Field dressing a deer is a straightforward process once you understand the anatomy. The goal is to remove the internal organs promptly so the carcass cools quickly, preserving the quality of the venison. Work methodically from the sternum to the pelvis, keeping the blade shallow and angled away from the organs, and cool the meat as fast as the terrain allows.

Wild animals can carry zoonotic diseases — always wear gloves.
Keep the knife edge facing upward to avoid puncturing the stomach or intestines.
Take extra care near the pelvis — the bladder is close to the surface here.
Tie off the anus with cord before removing organs to prevent faecal contamination.
Use two fingers as a guide between the blade and the organs when opening the abdomen.
Cool the carcass below 7°C as soon as possible — pack the cavity with ice in warm weather.
